Boebert is the owner of Shooters Grill in Rifle, Colorado. Boebert confronted then-presidential candidate Beto O’Rourke in September 2019, saying, “Hell no, you won’t take our guns” in response to comments the candidate made during a debate. In June 2020, Boebert won her primary challenge against incumbent Republican Scott Tipton.

Boebert held campaign events where attendees did not wear masks, criticized her primary opponent Scott Tipton for voting in favor of the CARES Act and was issued a cease-and-desist order for operating her restaurant during a period when Colorado restaurants were instructed not to operate.
Boebert supports repealing the Affordable Care Act. She opposes single payer health care, saying the costs would be prohibitive for small businesses like hers. A campaign spokesperson has said that, "We must protect coverage for pre-existing conditions."
In an interview, Boebert said, "This has proven to be a states’ rights issue, and I don't think the federal government should interfere with that."
